Skye Prawns

The Skye prawn belongs to the langoustine family. Although the recipe given here is not a traditional one, the piquant sauce admirably points up the delicious texture of the succulent prawns. This recipe will serve four people.

 

Blend together mayonnaise, tomato puree, paprika and tabasco. Season to taste. Boil prawns in salted water for only two minutes. Remove and shell. Fold cream into sauce mixture and serve with prawns. Garnish with wedges of lemon and whole (unshelled) prawns.
