'During the old regime, the French moved from table to the ante-room to refresh their lips and finders immediately after the substantial part of their repast. Madame the Comtesse de Genlis appears to consider the abandonment of this practice and the introduction of finder-masses as one of the most flagrant innovations of parvenu manners.'

The Cook and Housewife's Manual, by Mistress Margaret Dods, of the Cleikum Inn, St Ronan's, 1826. Meg Dod^ was the pseudonym of Mrs. Isobel Christian johnstone, friend of Sir Walter Scott; born in Fife in 1781, and died in 1857.

Beat the butter until creamy, then work in the sugar, and beat well. Add the lemon rind. Mix the baking powder into the Cornflour and add it alternately with the beaten eggs to the butter and sugar mixture. (If the eggs are small a tablespoon of milk may be needed, if the mixture is very stiff.) Half fill 24 small greased patty tines, or paper cases. Bake in a hot oven (425°F.) for about 10 minutes.

Makes about 24.
