GOOSEBERRY FOOL
Top and tail the gooseberries and cook in the water. When nearly tender, add the sugar. Rub the fruit through a sieve and leave to cool. Make the custard and add to the fruit puree. Beat with a whisk for a few minutes. Serve in individual glasses, topped with whipped cream. Serves 6
