Combine the flours and rub in the butter. Stir in the sugar. Turn on to a floured board. Knead the mixture thoroughly with the hand into a smooth dough. Shape into rounds and notch the edges with the forefingers and thumbs. Bake in a moderate oven (350°) till golden brown.

Note: For the rich, unforgettable taste of good shortbread, only the best ingredients should be used—butter in preference to margarine, and the finest plain flour and castor sugar.
