FISH CAKES
1 Ib. cooked fish
1 1/2 Ib. mashed potatoes
chopped parsley
Cream the fish with the sauce. Add the mashed potato, parsley, salt, and pepper. Shape into cakes, dip into beaten egg and breadcrumbs and fry in hot fat till golden brown. Serves 4-6
WHITE SAUCE
Preparation Cooking Serves 4-6
1. Mix cornflour to a smooth paste with a little cold milk.
2. Warm remainder of milk. Pour on to paste and mix well.
3. Return to pan.
4. Cook, stirring, until sauce thickens, boils and is smooth.
5. Simmer for 2 minutes
6. Remove from heat and stir in butter, if used. Season to taste.
